Happy Sunday Veggie Fam! I was in the mood for takeout. Noodles are my fav and I always order the Lo Mein. So, here is my vegan, Veggie Lo Mein recipe. Enjoy! I have all the recipe details via my Instagram posts below.

It's #SundayRecipeTime Veggie Fam 🌱. This week, I was feeling like having takeout 🥡. It's been a while since I had Veggie Lo Mein, so I figured why not do a #SundayRecipeTime featuring it 🤷🏾‍♀️! I have the full recipe ⬇️ • 1 pint of Shitake Mushrooms • 1 Baby Bok Choy (roughly chopped) • 1/2 box of Veggie Spaghetti Noodles • 1/2 Sweet Onion (sliced) • 2 cloves of Garlic (minced) • 1/2 tsp of Chili Garlic Sauce • 1/2 tsp of Dark Brown Sugar • 1 tsp of grated fresh ginger • 1/2 cup of Low Sodium Soy Sauce • 1 tbsp of Canola oil • Salt and Ground Black Pepper to taste • Cilantro (chopped for garnish) 1. Follow the instructions on your box for preparing your spaghetti noodles. Cook and sit aside. (Tip: toss with Vegan spread or canola oil so the noodles don't stick as they sit.) 2. Turn the stovetop to medium heat. 3. In a saute pan, add in Canola Oil. 4. As the oil heats up, add in your ginger and garlic. Allow them to saute for 1 minute. 5. Then add in your onions and bok choy. Stir everything together, cover, and cook for another 2 minutes. 6. Once the veggies have sweated and become soft, add in your salt, pepper, and all of your other veggies. Cover and cook for an additional 4 minutes. 7. Om the side as the Veggies are finishing, grab a small bowl and add in your soy sauce, chili garlic sauce, and dark brown sugar. 8. When the 4 minutes are up, pour the sauce over your veggies. Mix well so the veggies are covered and help warm up the sauce. 9. Toss your veggies with your noodles and enjoy.

    I’m a huge fan of grits. I like the fact that these are vegan in case some of my friends aren’t eaten meat products.
